OLD WINE TRADITION Bulgaria wants to acquire status as a producer of quality wines Even one and a half decades after Europe has overcome its division into blocs, Bulgaria is still little known in Western Europe, although Bulgarian specialities such as healthy yoghurt, fine rose oil and oriental tobacco are highly esteemed all over the world. In Bulgaria, a traditional agricultural country, more than half the national territory is farming area and about one in ten of all Bulgarians is employed in the agricultural sector. The food and luxury food industry contributes twelve per cent to the national economic performance and, together with the booming tourist industry, it plays a great part in the clearly noticeable economic recovery with growth rates between four and five per cent during the past few years. In order to integrate the Bulgarian agriculture into the European Single Market, the European Commission grants the EU membership candidate subsidies from the agricultural accession ...

WHISKY AND VODKA IN KEEN COMPETITION The UK spirits market The UK spirits market is one of the biggest in Europe. According to the latest market report it was worth just over £ 9 billion in 2003, at the same time the average Brit drank 3.7 litres of spirits and spent £ 152. But like the rest of Europe, sales are showing a very slow growth only with just 2.2 per cent annually. Especially the whisky market has struggled in the recent years. So the producers have continually to review the consumer base and try to appeal new consumer groups. Source: Ballay

Whisky Market researchers from Euromonitor predict that whisk(e)y will continue to decline by 3 per cent year-on-year, being led by the large blended whisky subsector. Blended whisky was dragged down by the on-trade which declined by 9.5 per cent in volume terms, while the off-trade blended whisky weakened by only 2.1 per cent – largely because of a series of price promotions which encouraged customers to buy more.

HARDLY PRESENT When you ask somebody in America, Africa, Asia or Australia “What kind of products do you associate with Germany” you are likely to get two answers: “beer” and “cars”! All over the world Germany is well-known for its high-quality beer and cars. BMW, Mercedes and Porsche produce premium cars and are leading automobile corporations. Volkswagen is one of the world’s largest car manufacturers. Unlike the German car industry, German breweries are hardly present in the world beer market. But why If German beer is well-known all over the world, why are German breweries not leading companies in the world market We might find some answers to these questions by looking at the past, present and future of the German beer industry.

Past Between 1950 and 2000 the German beer market increased by a fivefold from less than 20 million to over 100 million hectoliters. In this time period five different stages can be identified: growth, maturity, stagnation, reun ...

SENAI TECHNOLOGICAL SEMINAR IN SÃO PAULO Interview with SENAI Director Dr. Alvaro Dertinate Nogueira Vassouras, and we will not have the possibility to offer a barbecue and promote a visitation of our plant, but on the other hand we will provide the possibility to gather many brewing and supplier experts in one place. We think that our time work with Sindicerv and Cobracem is the proper method to improve the beer sector in Brazil. BBII: Do you generally expect an increase in the number of participants, or do you believe that especially the number of international participants will rise

This year, a new situation has arised in the context of the execution of the SENAI technological seminar which takes place every two years. For the first time, the seminar will not take place at the location of the Senai in Vassouras. Instead, the technological symposium will take place in parallel to the Brasil Brau from June 15th to 17th 2005. What are the reasons for this change Wolfgan ...

BBII 02-05 34-39 Realizing every type of water quality
Vorschau
REALIZING EVERY TYPE OF WATER QUALITY Water treatment in breweries and soft drinks industries The composition of the raw water is of great importance to the quality of beer and soft drinks. The difference in the brew water for instance is the reason for the difference in the various regional beer types. In the case of soft drinks, a wider spectrum of water qualities is required, depending on the type of drink to be produced. Whereas high salt contents are needed for mineral waters for instance, this is objectionable for lemonades and fruit drinks. In general the natural composition of ground and surface waters very seldom meets the characteristics of water required for the production of a good quality clear beer type or for the production of soft drinks. Due to the water treatment processes available today, it is possible to realize every type of water quality by pre-treatment.

Critical raw water Modern water treatment processes are becoming more important due to the seve ...

FIT FOR THE INTERNATIONAL STAGE German universities contribute quite a lot to the worldwide positive image of the German brewing and beverage industry. During our visit at the EBC Congress 2003 in Dublin, we suddenly had the idea to offer a sponsoring to excellent students of German universities so that they will be able to participate in international congresses, which are usually beyond their means. We have realised this concept, and four selected students (two from the university committee of the Technical University in Berlin/VLB and two from the Technical University in Munich-Weihenstephan) got the chance to join the trip to the 30th EBC Congress, which took place 16 to 18 May in Prague. In order to underline the international competence of German universities, we supported each one German student and also one student with another nationality. Due to our eight different be ...

News Dry pure culture yeast in the brewery Dry yeast has been used for the daily routine work in the winemaking and baking industry for years. Even in the “home brewing” sector, home brewers often use dry yeast for brewing which is partly also a component of so called “home brewing kits”. The following reports on a possible commercial use of dry yeast in breweries.

Advantages of dry yeast with yeast supply The supply with yeast is often a big problem for small breweries or brewpubs without a yeast propagation of their own. The required pitching yeast often sources from neighbouring breweries with a yeast propagation of their own which is related to problems due to the different consistency of the yeast (“thick pulp”) causing inexact yeast dosages. Sometimes, the company yeast is treated as a “company secret” which is hardly referred to third parties, so that yeast for special beer types (wheat beer) is not handed on. Dry pure culture yeast supply can be an ...
